Viticulture and Enology

Pedro Olivares’ vineyard is located in Sierra de Segura, about 150 km from Jaen. From its beginnings it was the cause of many comments, because very few understood that in that green ocean of olive trees, a vineyard could have a place. As time has always been our best ally, there are now many who interpret positively this unique project.

The ground that pampers the plants is full of “toba”, a brown calcareous stone, used as ornamentation in building work and acts as a sponge on the soil that occupies.

It is not a winery to use, it is a small but capable to produce wines that beat the landmarks and the legends of a land where only seems to reign the olive oil.

In Sierra de Segura, in Los Llanos de Arriba village this place has been created. Always guarded by two great characters: Tina and Peter.

They are the ones that daily take care of this great treasure, that fruit of knowledge and effort rests and reaches its point of personality, down in the cellar.

Trying to explain WILD is something wild itself. The intent of this project is to discover, pamper, select, share, suffer … with the native varieties of each wine-making area discovered.

We are surrounded by a spectacular wine heritage that often dies for the benefit of production and commercialism.

Year after year this agricultural capital sinks into its misery, and its heirs get rid of it, sometimes due to ignorance, sometimes due to a lack of explanation, there is no one explaining the great effort made by previous generations, so we can enjoy today something unique and unreachable for most mortals in the whole world.

I recall with pleasure those conversations in Australia about the behaviour of what we call here in Spain “old vines”. In Australia they dream about having them, whilst here in Spain we dream with tearing them just to collect the incentive payment for tearing. Brutal.

The Wild paradise, the countryside, the mountains, the hills covered with vineyards, it is what is pretended to present on the bottle’s label with this nomenclature.

Traducir wild es algo salvaje ya de por sí. La intención de este proyecto es descubrir, mimar, seleccionar, compartir, sufrir…con las variedades autóctonas de cada espacio vitícola que descubra.

Estamos rodeados de un patrimonio vitícola espectacular que muchas veces fallece en pro de la producción y el mercantilismo.

Año tras año este capital agrícola se hunde casi en la miseria y los herederos de él prescinden, muchas veces porque no entienden, otras porque no hay nadie que se le explique todo el esfuerzo que generaciones anteriores realizaron para poder disfrutar hoy de algo único e inalcanzable para la mayoría de los mortales del mundo mundial.

Recuerdo con agrado en Australia charlas y charlas sobre el comportamiento de lo que llamamos aquí viñas viejas. Sueñan con ello y aquí soñamos con arrancarlas para cobrar las primas de arranque. Brutal.

El paraíso wild, el campo, las montañas, las colinas horadadas de viñedos , es lo que se pretende señalar en la etiqueta de la botella con esta nomenclatura.

Eating and Drinking in many places gives you a vast experience in many culinary facets. Something similar happens with wine tasting.

After wandering around the Mediterranean I missed a wine that would unify the spirit of this temperate climate, producing wines pigmented by the sun, adorned with a fruity strength and extraordinary wisdom.

For the manufacturer, the Bobal and Monastrrell had to be the main characters in this first act, hence the appearance of Bobastrell. A cuvee of Bobal from Utiel and Monastrell of various heights in the Bullas area.

The name “Bobastrell” was authored by the owner of one of the largest wine distributors in the USA.

New varieties will be joining this assembly soon, always a national heritage, such as Grenache, Carignan, etc … always with its origins influenced by the Mediterranean Sea.

The way of farming is the same as in my portfolio, the only change here is the RISK of elaborating these wines with their corresponding methods.

If you look for emotions, these are your wines.

As a result of past tastings, and the knowledge shared around the world with my colleagues I decided to blend all these factors into wines never made before.

These are risky wines that come from combined soils, varieties and regions. As always, all these variables are controlled under my instructions.

En este apartado incluyo vinos fuera de serie. El concepto es el mismo que el resto de mis porfolio, lo que cambia es el riesgo. Las emociones con estos vinos están aseguradas. Son fruto de combinaciones de técnicas aprendidas en miles de catas y bodegas de medio mundo.

Se trata de disfrutar y experimentar nuevos modos de ensamblar la vida natural con el conocimiento del enólogo y sumiller.Son vinos súper, súper arriesgados, combinan suelos, variedades increíbles y riesgo en la elaboración. Son inversiones a corto para sorprender y a largo para descubrir nuevos caminos.
