Tasting

We could define this wine as an infusion of Bobal grape belonging to centenarian vineyards. Once the grapes are vatted, after a couple of hours in contact with their skins, a wort must be bled without exerting any pressure. The wort spontaneously begins an alcoholic fermentation. Without no correction is worked until it stops in wintertime, leaving some grams of residual sugar. In the spring after malolactic fermentation, a roughing filtration is carried out and the wine is bottle up with a metal cap. There is a certain microbial activity that can lead to the appearance of carbon dioxide in small proportions that will provide a certain crispness to the wine. In nose it is abundant in fruit, berries mainly. A really cool wine!

Tasting
