Surprising and intentional discovery. More than 25 years ago in my Montillano days discovering sensations in Aguilar de La Frontera, with my friends from Toro Albalá I already dreamed of creating something similar. I am intrigued by the world of fine wine, biological aging, % vol, temperatures, humidity, glycerin and even histamines, but I was always looking for the perfect wine and this is it for me. This first fino past is an altruistic contribution to the world of hedonistic wine. It is difficult to find a wine that has suffered so much to give us so much pleasure.

Tasting sheet:

• Color: Intense yellow.
• Nose: Nuts, from almond to hazelnut. A wide range of aromas evoked from a good fine wine.
• Mouth: It was born as a white wine, it became, without heading, a fine wine. The work on saccharomyces muntilliensis was great for him. Later he abandoned himself to his free will, without racking, without breeding.
• Operating temperature: Recommended 11ºC.
• Consumption: Ready to be tasted.
• Pairing: The perfect wine to open any situation, the faithful companion of an aperitif.

Crianza

Crianza sobre velo de flor, lías y oxidativa. Más de 50 años y con una edad del viñedo de más de 50 años. Una recolección manual selectiva y  una vinificación sin aditivos, levaduras salvajes ni sulfuroso añadido. Por último, una filtración por desbaste y una fermentación maloláctica espontánea.
